Oh slow cooker, why hath thou forsaken you?!  My lame excuse of it being too heavy and too high up in the pantry is now null and void.  The juicy and flavorful chicken that was produced by my neglected appliance has taught me to never forget about my trusty Crock-Pot.  I went an entire winter without pulling this thing down!  What was I thinking?!

One lazy day I decided to throw a few ingredients together in the slow cooker.  Little did I know, the salsa I used was quite spicy and therefore so was my shredded chicken.  In order to tame the spice level I added in a bit of cream cheese.  When I say a bit I mean only 2 TABLESPOONS!… In the whole entire Crock-Pot of chicken!  I like to avoid too much dairy since Cohl has an actual allergy to it and I just have a little lacto-into.  But honestly, the little amount of cream cheese I added worked wonders at toning down the spice and enhanced to creaminess of the chicken.

You can serve this chicken in tacos or with some grilled veggies and beans in a rice bowl.  After having already made this dish a few times I have discovered it is just as tasty in any of the aforementioned.  Even as the seasons are starting to warm up, remember… your slow cooker does not produce much heat… And you get to come home to a yummy, no-fuss meal.  So please take my advice and don’t neglect your slow cooker anymore.  🙂  Hope you enjoy!

Slow Cooker Salsa Shredded Chicken

A Slow Cooker Salsa Shredded Chicken recipe that is quick, easy, gluten free and can be made using a Crock-Pot.

Ingredients 

  • ½ c. chicken broth
  • 2 lbs. chicken breasts uncooked
  • 1 c. salsa mild-medium
  • 1 t. cumin
  • ½ t. paprika
  • ½ t. garlic powder
  • 1/8 t. cayenne pepper
  • 1 t. salt
  • ½ t. pepper
  • 2 T. cream cheese

Instructions 

  • Pour chicken broth into the bottom of a slow cooker. Add chicken and then pour the salsa on top.
  • In a small bowl combine the next 6 ingredients. Sprinkle the seasoning ingredients on top of the chicken breasts.
  • Cover and turn slow cooker on Low for 6-8 hours or High for 4-6 hours.
  • During the last 30 minutes of cooking, shred chicken with a fork and add in cream cheese. Cover and let cook for 30 more minutes.
  • Give chicken a good stir before serving. Chicken tastes great in tacos or served in a rice bowl. Enjoy!
