A skinny scalloped potatoes recipe that is made with less cheese and dairy than your typical dish. It makes a great weeknight gluten free side dish.
Skinny Scalloped Potatoes?! Is it even possible? The trick to these potatoes is that they are covered in a sharp cheddar cheese sauce made primarily of milk. And if you like to limit your dairy … you’re in luck. Almond or soy milk work great in these potatoes, too! (I actually made these potatoes with almond milk and no one could tell a difference. *Shhhh*)
Whenever I see “thinly sliced potatoes” in the ingredient list of a recipe I admit… I cringe a little bit on the inside. However, I have a tip for you that I discovered recently. Remember those random attachments that came with your food processor?! One of them is a magical slicing tool that makes life sooooo much easier when cooking scalloped potatoes!
