A quick and easy, gluten free bell pepper stuffed chicken recipe for dinner–full of roasted bell peppers, goat cheese, spinach, and basil.
Chicken, oh chicken…. oh how I love cooking with you!! Chicken is so extremely versatile while also be pretty simple to prepare. I love that you can add just about any flavor to it and it simply absorbs it. These stuffed chicken breasts are rather simple to prepare. Most nights I like to shoot from the hip when it comes to preparing dinner. I look at what is in my pantry and refrigerator and see what pairings I can come up with. This time it was a jar of roasted red bell peppers (you can normally find these in your canned vegetable aisle at the grocery store), a handful of spinach, goat cheese and a few fresh basil leaves. Roll all of these ingredients up together in a pounded flat chicken breast and Voila!! Dinner is served.
Feel free to try any other variation of filling ingredients that you may have on hand. If you don’t like goat cheese and enjoy a good blue cheese–go for it! Also, if you don’t have any roasted bell peppers on hand? Try some sun-dried or regular tomatoes. The sky is the limited with this recipe. As a tip, make sure not to overcook your chicken as they will be too dried out when done. Serve these next to some Skinny Scalloped Potatoes and Browned Butter Brussel Sprouts and your family will talk about your SPECTACULAR dinner for weeks to come. 🙂 Hope you enjoy!
