Almost three years of being gluten free and I still find eating out to be one of the most challenging obstacles. I quickly realized I had to learn how to re-create the Thai cuisine favorite, Pad Thai.
When Cohl and I started dating, our first real date consisted of Thai food. He was moving into a new house in downtown San Antonio and wanted to take me there to see it. We picked up food from Thai Restaurant and headed to the new place. His hope was that we could sit in the new house and enjoy our meal, but when we arrived it became apparent that the electricity was not turned on. With it being the end of September in Texas, the air was still quite stifling inside the house. Instead, we opted to sit on the back porch and devour our delicious dishes. Little did I know, I was sitting on the back porch of the first house we would live in as husband and wife.
Every time I make this dish it brings me back to the first date I had with my husband. Hopefully this Pad Thai will bring you much love and a very special night, too!
