These gluten free pumpkin muffins with maple syrup are free of refined sugars and full of wonderful Fall flavors!
Confession time… I have an obsession. An obsession with all things Fall and Winter related. I have yet to figure out why the best holidays of the year are all crammed into a 3 month period? (My husband’s birthday in September and mine in December, included.) Because I love this time of the year so much I find myself trying to extend the wonderful things into more months of the calendar. Last year this resulted in us leaving our Christmas tree up until June :-O. Yes, initially we were only going to leave it up through January and then we realized how much we actually enjoyed the lighting in our old living room and well, you know…
This time around, as soon as August 1st hit I hung up my “Fall” wreath. Was it 104 degrees here in Austin, Texas?… yes. Did I care?… absolutely not. Along with the wreath I proceeded to hang Autumn-themed towels on the oven. And then came the pumpkin. Why oh why did I cave so early?! Now all I can think, dream and breathe about is pumpkin. (Especially these gluten free pumpkin muffins!!)
Maybe it is because for 9 months of the year we deprive ourselves of this magnificent flavor. Or maybe because we correlate pumpkin desserts, lattes, soups, etc. with that certain time of the year. That time of year when the leaves start changing, friends and family are surrounding you and you can pull out your favorite pair of boots to wear outside in the crisp cool air. Whatever it is, pumpkin holds a special place in my heart and I hated to confine it to the months of September-October. So don’t be shy, awaken your inner pumpkin lover and bake these yummy gluten free pumpkin muffins with maple syrup whenever your heart desires! 🙂 Hope you enjoy!
