The spicy flavors of pico de gallo combine with the sweetness of pineapple for the ultimate topping for tacos or chicken!

Or… you can just eat it by the tortilla chip scoopful.  <–This is our preferred method.

We were recently at our newly married friends’ house and happened to stop by at the perfect time.  They were in the kitchen making pico!

After helping them chop a few of the ingredients, we devoured the entire bowl in under ten minutes.

Pico de Gallo is definitely a labor of love.

There is quite a bit of chopping, dicing and juicing involved, and if you have a hubby or son with a voracious appetite, all of your efforts can be demolished in a matter of minutes.

This is why I highly advise making the amount of pineapple pico de gallo called for below.  Trust me, you’ll still wish you had more!

How to eat Pinapple Pico de Gallo:

There are quite a few ways that you can enjoy your pineapple pico de gallo:

  • Serve it as a topping for tacos.  (It would taste amazing on top of these Ground Turkey Tacos!)
  • Eat it as a dip at your next party.
  • Scoop a ton of it over some baked or barbecued chicken.
  • Enjoy it as a light and refershing side dish.

Don’t Want Your Pineapple Pico de Gallo too spicy?

Make sure you test out the spiciness of your jalapenos BEFORE you toss them in.  Jalapenos and other peppers oftentimes vary drastically in their spice level.

I like to cut off a small piece of the jalapeno and taste it.  If my mouth is on fire, I know one jalapeno will be sufficient.

If the jalapeno barely has any spice?  I use one or two more jalapenos and make sure to test their spice level before putting them into the pineapple pico de gallo, too!

Ingredients 

  • 2 c tomatoes finely chopped
  • 2 c pineapple finely chopped
  • 1 c sweet onion finely diced
  • ¼ - ½ c jalapenos finely diced*
  • ¼ c lime juice fresh
  • 2 cloves garlic minced
  • ¾ c cilantro chopped
  • salt to taste

Instructions 

  • Combine all ingredients in a large bowl. Toss to combine.
  • Serve on top of chicken, tacos or eat it as a dip!
