Look no further. You’ve found a quick and simple lunch that is anything but boring and mundane. After over 2 years of eating the same ole’ salad for lunch, Cohl and I finally hit a wall and decided to change things up. Not wanting to spend too much prep time for lunch, I went ahead and purchased a pre-cooked rotisserie chicken at the grocery store. I will caution you, however, if you are super gluten-intolerant to check the labels!! Go for the “Natural” chicken, or the one that is not pre-seasoned, as these are much less likely to have hidden gluten in any seasonings. Also, the filling in these wraps is already so flavorful, you do not need any additional seasoning from the chicken.
If you are packing these up for lunch, make sure not to assemble them beforehand. You will definitely want to bring your lettuce separately. Otherwise, you will end up with not-so-yummy, soggy lettuce wraps. (Yup, learned that the hard way.) And trust me, the peanuts and green onions on top are a necessity!
