Look no further. You’ve found a quick and simple lunch that is anything but boring and mundane. These Peanut Asian Chicken Lettuce Wraps just might change your life.
After over 2 years of eating the same ole’ salad for lunch, Cohl and I finally hit a wall and decided to change things up.
Not wanting to spend too much prep time for lunch, I went ahead and purchased a pre-cooked rotisserie chicken at the grocery store.
I will caution you, however, if you are super gluten-intolerant to check the labels!! Go for the “Natural” chicken, or the one that is not pre-seasoned, as these are much less likely to have hidden gluten in any seasonings.
Also, the filling in these peanut Asian chicken lettuce wraps is already so flavorful, you do not need any additional seasoning from the chicken.
If you are packing these peanut Asian chicken lettuce wraps up for lunch, make sure not to assemble them beforehand. You will definitely want to bring your lettuce separately. Otherwise, you will end up with not-so-yummy, soggy lettuce wraps. (Yup, learned that the hard way.)

Peanut Asian Chicken Lettuce Wraps
- 1 fully cooked rotisserie chicken shredded
- 1/3 c soy sauce* gluten free
- 3 Tbsp peanut butter smooth
- 3 Tbsp honey
- 1 Tbsp rice wine vinegar
- 2 Tbsp olive oil
- 1 tsp sriracha
- ¼ tsp pepper
- ¼ tsp garlic powder
- Lettuce for wraps
- ½ c roasted peanuts
- 1 bunch green onions
- Shred pre-cooked rotisserie chicken (I like to buy mine already cooked at the grocery store and get the “natural” flavor so there is no hidden gluten and no extra flavors.) Hint: chicken shreds easiest when it is still warm.
Place all ingredients from soy sauce to garlic powder together in a large bowl and whisk until well mixed. Add shredded chicken and toss to coat.
- Serve chicken mixture in a lettuce wrap and top with peanuts and green onions to serve.
Store chicken and lettuce separately between servings.
*Can use Tamari gluten-free soy sauce or liquid amino acids, also.
