Recently I have been on a smoothie kick. This streak has led to me buy enormous amounts of Greek yogurt. One week I decided to not drink quite as many smoothies and ended up with a HUGE jar of Greek yogurt untouched in the refrigerator. I could not even fathom drinking another smoothie by this point. What in the world should I do with this yogurt?!… Make Greek yogurt chicken, of course 🙂
There is something about the summer that makes you want to eat just a tad bit healthier. (Perhaps it’s those swim trunks or bikini you know you will be donning in a few days for the neighbors’ pool party?!) Whatever your motivation is, you should know that eating plain ole’ grilled or baked chicken is not your only solution for eating healthy.
In this Greek yogurt chicken, lemon, dill and parsley combine to give it incredible flavor. You have the option to marinade your chicken in the yogurt sauce mixture for 30 minutes or up to 2 hours! The choice is up to you. The longer you marinade, the more the chicken will break down.
A Quick Substitution:
Don’t have any fresh dill or parsley? No problem! You can always use dried herbs, but just make sure to use about half as much. A little goes a long way!
