It’s OK if you’re already drooling… I’m still drooling 2 weeks later just thinking about how delicious this cake was. A week and a half ago was my husband’s 27th birthday and I was picking my brain for the entire month preceding it to try and come up with the perfect birthday cake for him.
Last year I made a scrumptious German chocolate cake with peanut butter coconut frosting. He loved it. This year I wanted to out-do last year’s cake. Why so much pressure on a simple birthday cake?! Well, Cohl is extremely hard to shop for. I agree, most men are rather difficult to find gifts for, but this wonderful man researches just about every purchase he buys for weeks in advance, prefers USA-made products, and also has impeccably unique style. So, you can imagine the stress I undergo when September 23rd and December 25th come around. What I’ve learned to do is request an itemized list of exactly what he wants and then just surprise him with a ridiculously elaborate birthday cake. Hence, this gluten free dark chocolate cake with peanut butter frosting and chocolate ganache.

It actually came out way more irresistible than I thought. Within an hour of cutting the cake, I looked at the stand to see mere crumbs remaining (which our dear friends were gathered around, scraping up with a spoon.) Needless to say, if you have a difficult-to-shop-for man/woman in your life who loves Reese’s Cups and dark chocolate, this is the cake for them! Hope you enjoy 🙂
