These Chicken & Avocado Stuffed Arepas are a wonderful gluten-free lunch or dinner alternative to your typical sandwich!

Arepas are very popular in the Venezuelan and Columbian cultures.  They can either be sliced open, stuffed, and then eaten like a sandwich or served alongside accompaniments such as cheese and avocados.

Almost every week Cohl and I go on a date night.  Sometimes it is planned, other times it is spontaneous, but it is always awesome!

One night a few weeks ago we happened to be hanging out over in East Austin.  If you have not checked it out, yet, you should totally go!!  It is a relatively new and thriving section of Austin with a plethora of bars and restaurants… all much more affordable than most other places in downtown Austin.

As we finished up drinks with one of our buddies, we found ourselves extremely hungry.  If any of you know Cohl, you know this is not uncommon for him.

Fortunately for us, just a few hundred feet away was a food truck park.  And in this food truck park was our newfound favorite spot… Pepa’s Arepas.  They had an assortment of stuffed arepas, all of which sounded heavenly.  After gobbling some up, I promised Cohl that I would learn how to make this Venezuelan classic.

A few attempts later, and a very wicked hot oil burn on my arm!!, we had the smell of fresh arepas filling our house.

Our favorite filling ingredients are what you will find here… some shredded chicken, queso fresco, sauteed onions and bell peppers, avocados, and cilantro.

Feel free to load them up with whatever ingredients you happen to have on hand.  Don’t have any queso fresco?  Try some cheddar cheese.  Not a fan of chicken?  Pulled pork would be amazing, too!

Chicken & Avocado Stuffed Arepas

These Chicken & Avocado Stuffed Arepas are a wonderful gluten-free alternative to your typical sandwich!

Ingredients 

  • One batch arepas
  • 3 tbsp olive oil
  • 1 clove garlic crushed
  • 1 c onions finely chopped
  • 1 c bell pepper finely chopped
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp Sriracha or other hot sauce *
  • 3 ½ c shredded chicken cooked
  • 1 c refried black beans
  • 1-2 large avocados cut into cubes
  • Queso Fresco
  • Cilantro

Instructions 

  • In a medium saucepan over medium heat add olive oil, garlic, onions and bell pepper.
  • Saute for 5-7 minutes, stirring occasionally.
  • Add salt, pepper, Sriracha and shredded chicken. Cook until chicken is heated through.
  • Fill each arepa with 2 tablespoons refried beans and ~½ cup of the chicken mixture. Repeat with remaining arepas.
  • Serve stuffed arepas with avocado, queso fresco and cilantro. Enjoy!
