A Little Bit About Me…
Here is a little bit about my gluten-free journey:
In December of 2012 my life completely changed. For years I had been dealing with embarrassing stomach issues as well as terrible headaches that I thought everyone must deal with. After talking with my husband and his mom, however, I figured out that it simply wasn’t true. Between the two of them they convinced me to try giving up gluten to see if that was a trigger for my GI upset and headaches. Trust me, it took a good while before they could convince me. After all, who really wants to give up bread, pasta, pastries and desserts? Certainly not me! After all, that is what currently made up 80% of my diet!
The Thanksgiving holiday brought with it many excruciating hours of laying doubled over due to stomach pains. It was after that week of pure torture that I decided to give this “Gluten Free” thing a try. I seriously thought it was just some silly diet fad and I would still have my same issues even without my beloved grain. In order to get true results I COMPLETELY removed all gluten from my diet. What happened in those next 3 days completely changed my life. By the third day of my diet change I noticed that I not only had not had any stomach issues, but I also had more energy. That low blood sugar feeling I had been experiencing after eating large quantities of gluten was completely gone. I had found my cure–thanks to my wonderful husband, Cohl, and my fabulous mother-in-law, Loree.
So here I am now, years after my self-diagnosis, to encourage each and every one of you who has ever been curious about your seemingly insignificant GI or neurological issues to give gluten free living a try. I am by no means an expert on the topic, but I do know a thing or two about cooking gluten free and would love to answer any questions you may have.
